ARDENT GOURMET SMALL BITES: Yuubi Sushi and Bar June

Posted on February 20, 2025 by Editor

By David & Susan Greenberg

Yuubi Sushi is located within a house-like structure in Beaverton. It’s been rated as one of the ten best sushi restaurants in the Portland area by Eater. There’s a delicacy to its sushi which only artistic, experienced sushi chefs can imbue. Quite the opposite of store-bought sushi, the rice is loosely joined, just enough not to fall apart, and the toppings are exquisite.

A Tuna Madness nigiri (tuna topped by chopped tuna) had a tiara of caviar.

The Insanity Roll was laminated in salmon, hit by a blowtorch, and infused with truffle paste.

We can’t remember ever eating unagi (eel) that was more delicious, the inverse of how you’d expect a slithery eel to taste.

With a Sapporo it’s a perfect meal.

We then took a short walk to Bar June.

Bar June serves no drinks that would be recognizable to Humphrey Bogart or any other hard-boiled detective. What it serves they would disdain as dandified. But dandies that we are,  we thought they were great. We drank a Club Lilou (aged rum, dark rum, Passionfuit liqueur, coconut water, orgeat, pineapple, and lime) and a Sweet Adieu (Aperol, Rose Blanco, lemon shrub, Prosecco). Despite their complexity, the doom of many drinks, they were delicious.
